Emily Rubin MPH, RD, LDN Bio

 

With over two decades of experience at Thomas Jefferson University Hospital in Philadelphia, I have served in various capacities, including Director of Clinical Nutrition and Lead Clinical Dietitian for the Division of Gastroenterology and Hepatology. Additionally, I have contributed my expertise as a dietitian for the Celiac Center, Fatty Liver Center, and Weight Management program. In these expert roles, I have provided comprehensive nutrition education and medical management to patients of all ages with a wide range of gastrointestinal diseases and obesity. My responsibilities have included developing customized meal plans and creating educational materials for the patients. I have served as a preceptor, providing guidance and supervision to residents, fellows and interns during their clinical rotations where we discuss various topics related to nutrition and its role in healthcare. I conducted expert reviews of educational materials and Continuing Education (CE) courses for nutrition professionals. This involves reviewing books, learning objectives, and CE exams, as well as completing online surveys to assess the appropriateness and relevance of the courses. Some recent reviews include "Need-to-Know NAFLD: The Complete Guide to Nonalcoholic Fatty Liver Disease" by Naim Alkhouri and Stephen A. I received my adult certification in obesity interventions in October 2019. In June 2024, I have also completed my MPH degree with 4.0 GPA and Capstone on incorporating the role of a Dietitian with patients on GLP-1 (glucagon like peptide 1) medications and improving patient outcomes. In May 2024, I was a speaker at the top GI international GI conference Digestive Disease Week 2024 on A Multi-Disciplinary Approach to Weight Inclusive Care: From Teaching to Clinical Care Clinical Symposium. I have also been the Philadelphia Public Relations Chair for the Academy of Nutrition and Dietetics since June 2018. In addition, I wrote the Proclamation for National Nutrition Month for Philadelphia for the past 6 years. I also served on the Inquirer’s Health Advisory Panel to provide the public with the timely, credible, in-depth resources to eat healthy, get fit, raise a family and be a smart health consumer.

I have been deeply involved in various teaching and educational activities, enhancing the field of nutrition and dietetics. I have served as a moderator and board member for the Thomas Jefferson Women’s GI Conference for over 5 years. My Grand Rounds presentations include the Fatty Liver Symposium and Evolution of the Low FODMAP diet for managing irritable bowel syndrome (IBS). I led a session on Nutrition Therapy in IBD with live patient cases at Thomas Jefferson Medical School and have regularly presented at the Fellows Nutrition Conference since 2001, covering topics such as nutrition therapy in obesity, liver disease, IBS, IBD, and gastroparesis. I presented multiple online seminars for the Philadelphia Dietetic Association titled "The RISE of the Gluten-Free Diet - Who? What? Where? When? Why?".

My clinical research has been instrumental in advancing knowledge and treatment approaches in gastroenterology and nutrition. My diet-based treatment of gastroparesis, with a particular emphasis on the efficacy of a small particle diet, is currently in publication in Practical Gastroenterology. Furthermore, I conducted a detailed examination of diet and nutrition in inflammatory bowel disease (IBD), providing insights into dietary interventions for patients with both quiescent and active disease states, as evidenced by her presentation at the American College of Gastroenterology (ACG) in 2022. I investigated the severity of celiac disease in patients with elevated liver enzymes, contributing valuable insights into potential associations between these conditions. My research extends to exploring the maintenance of a balanced diet while adhering to a gluten-free regimen, offering treatment options for individuals with gluten-related disorders, as published in Current Treatment Options in Gastroenterology. My expertise is further demonstrated through my involvement in clinical trials, including studies on gluten immunogenic peptides in non-celiac gluten sensitivity and the impact of diet liberalization on bowel preparation for colonoscopy. My contributions to the field have been widely recognized, with awards and presentations at prestigious conferences such as Digestive Disease Week® (DDW) and the Food and Nutrition Conference & Expo (FNCE). My research efforts have improved patient outcomes in gastroenterology and nutrition.

In addition to my clinical work, my expertise and insights have been featured in various media outlets such as FOX29, PhillyVoice, Yahoo.com and Today.com., contributing to discussions on nutrition, health, and wellness. I have provided valuable information on topics ranging from dietary trends to healthy eating habits, addressing common misconceptions and offering practical advice for individuals seeking to improve their well-being.

I have served as a provider for the City of Philadelphia Wellness program, delivering community nutrition education and promoting Colon Cancer Awareness. I have also provided nutrition presentations for support groups such as Beyond Celiac/National Foundation for Celiac Awareness (NFCA), Crohn's and Colitis Foundation of America (CCFA), and Philadelphia Ostomy Association. Additionally, I have volunteered with organizations like Tri-State Lupus Foundation of America, Rolling Harvest Food Rescue, and Angels in Motion, furthering my dedication to improving health outcomes in underserved communities.
